Ingredients

  • 3 Tbsp of Olive Oil
  • 1-1/2 lb of Short Ribs, about 4-5
  • 1 Yellow Onion, finely Diced
  • 2 Large Carrots, peeled and finely diced
  • 3 Stalks of Celery, finely diced
  • 4 Cloves of Garlic, finely chopped
  • 1/4 cup of Tomato Paste
  • 1 3/4 cups of Red Wine
  • 1 1/2 cups of Beef stock
  • Few Sprigs of Fresh Thyme
  • 1 Sprig of Fresh Rosemary
  • Fresh Basil
  • Salt and Pepper, To Taste
  • For Serving:
  • 1 lb of Medium Cut Pasta such as ziti, rigatoni or penne
  • Plenty of Grated Parm

Preparation

    1) In a dutch oven over medium high heat (right between medium and medium high) add the olive oil and allow it to come to temperature, meanwhile, salt and pepper all sides of the short ribs really well, once oil is ready, add them in and sear on all sides until deeply browned, remove to a plate and set aside.

    2) Total in the pot you should have about 3 tbsp of fat rendered (discard the rest) add the carrots, celery and onion and sauté for 7-10 minutes or until the veggies have cooked down and begin to develop some color, then add the garlic and cook 30 more seconds.

    3) Stir in the tomato paste, then add the broth and wine, herbs and nestle the seared short ribs in the braising liquid, bring to a boil, reduce the heat to low, cover and cook 3 to 3-1/2 hours or until the meat falls off the bone and shreds easily, remove the short ribs to a bowl, allow them to cool then shred and discard all the fat and bones.

    4) Discard the layer of fat off the top of the braising liquid then take half the sauce and blend it in a blender until smooth, pour back in the pot along with the shredded beef, adjust seasoning to taste and simmer on low while you bring some pasta water to a boil.

    5) When ready, cook the pasta a couple minutes shy of al dente, reserve about a cup of the starchy water right before draining, then drain, add the pasta to the sauce along with the water, about a cup of parm and cook all together for a couple minutes, stir in some fresh basil, and serve!
