Ingredients

  • 2 lb of 85/15 Ground Beef
  • 1 Large Yellow Onion, finely diced
  • 1 Tbsp of Olive Oil
  • 4 Cloves of Garlic, minced
  • 3/4 cup of Panko Breadcrumbs
  • 3/4 cup of Milk
  • 2 Eggs
  • 2 Tbsp of Garlic and Herb Seasoning or any seasoning you like
  • 1 tbsp of Worcestershire Sauce
  • 1 cup of Grated Parm
  • 1/4 cup of Chopped Parsley
  • Salt and Pepper to taste (light on the salt if your seasoning is salted)
  • For the Glaze:
  • 3/4 cup of Ketchup
  • 2 Tbsp of Sweet Chili Sauce
  • 4 Tbsp of Brown Sugar
  • 1 tsp of Yellow Mustard

Preparation

    1) Preheat your oven to 350 degrees, if you have a broiler pan, use that otherwise just line a baking sheet with parchment paper and set it aside.

    2) In a small skillet, add the olive oil and yellow onions with a pinch of salt, cook for about 7-10 minutes or until softened and as you're about to turn the heat off, add the garlic, stir and let everything cool a bit. While the onions are cooking and cooling, add the milk to the breadcrumbs and let those set aside as well.

    3) In a large bowl, mix the beef with all the meatloaf ingredients including the cooked onion mixture and breadcrumb mixture, mix really well, then form it into a 9x5 inch log on your prepared baking sheet and pop it in the oven for 40 minutes, meanwhile, make the glaze.

    4) In a small bowl, mix together the ketchup, brown sugar, chili sauce and mustard, after the 40 minutes, spoon the glaze over the partially cooked meatloaf, pop it back in the oven for 20 minutes then allow to cool a bit before serving.
